The Crunchiest Low Fodmap Crackers (gf)
I’m Obsessed with these crackers. I had been wanting to make a seeded cracker for ages and thought it would be a lot of effort, but this recipe is SUPER easy.
These have got to be the easiest thing to make and handy to get the kids involved in the kitchen.
They are gluten free, dairy free, lowfodmap and vegan. A highly nutritious snack that is #fertilityfriendly #lowfodmap #diabetesfriendly and sooo crunchy!

INGREDIENTS
· 1 cup sunflower kernels
· 1 cup pepitas
· 1/2 cup chia seeds
· 1/4 cup sesame seeds
· 1/4 cup linseeds
· 1 teaspoon salt
· 1.5 cups water
· 1 TB mixed italian herbs
· 1.5 tspn chilli flakes (or more if you like a bit of spice in your life)

Optional Mix Ins : Dried apricots/cranberries/slivered almonds - as long as youve got your base you can get creative with all sorts of flavours.
METHOD:
1. Preheat oven to 170°C and line two rectangular baking dish with baking paper.
2. In a medium mixing bowl, combine all of the ingredients.
3. Leave to soak for 15 minutes so the seeds can absorb the water
4. Stir well then spread evenly over the two baking trays (try to avoid it being thicker in the middle as it wont get crunchy) Ideal thickness is ~5mm.
5. Bake for one hour, tap to feel if crispy in the middle otherwise continue to cook until crispy.
6. Allow to cool and then break into shards.
